French Onion Soup

Another favourite, not so old as others, this particular recipe has only been made in the café for 6 or 7 years. Our tribute to French cuisine, or as has been remarked, a soup that shows how much the English really despise the French!


2 Large Onions
2 Tablespoons White Flour
2 Tablespoons Vegetable Oil
200ml Soya Sauce
1 Teaspoon Hungarian Paprika
2 Teaspoons English Mustard Powder
1 Large Sprig Parsley
1 French Onion Stock Cube
2 Pints Water
1 Teaspoon Molasses


  1. Peel and cut onions in half and slice thinly.
  2. Put the vegetable oil in the saucepan on a moderate heat and sauté the onions. Once they start to cook add the soya sauce and carry on cooking until soft.
  3. Add the flour and allow to cook for 5 minutes, stirring all the while with a wooden spoon.
  4. Have a pint of the water ready in a jug, add it slowly to the pan, stirring all the time so as to make a smooth mixture with the flour. Once mixed add the rest of the water, the crumbled stock cube, paprika, mustard and molasses. Turn up the heat and bring to the boil.
  5. Once boiling reduce the heat and simmer for 30 minutes.
  6. Before serving, sprinkle with finely chopped parsley. Serve garnished with croutons.
